Why this recipe works
Warming the peanut butter with honey and cinnamon is the key move: it turns a stiff paste into a pourable, spoon-dripping glue that grabs the granola and holds each apple sandwich together. A quick brush of lemon juice keeps the rounds bright and stops them browning, so the stacks look as fresh as they taste.
Ingredients
Stacks
- 1 large crisp apple (approx. 200g), Honeycrisp or Pink Lady
- 2 tbsp (32g) natural peanut butter, unsweetened
- 30g low-sugar granola (oats, seeds, almonds)
- 1 tsp (7g) runny honey
Flavor lifters
- ¼ tsp (0.5g) ground cinnamon
- 1 tsp (5ml) fresh lemon juice
- 1 tbsp (8g) chia seeds
- Pinch (0.5g) flaky sea salt
Optional garnish
- Few fresh mint leaves, torn

Instructions
- Slice and treat the apple. Core the apple and slice into 8 rounds roughly 0.5cm thick, then brush both sides lightly with lemon juice to stop browning and brighten the flavor.
- Loosen the peanut butter. Warm the peanut butter in a small bowl for 15 seconds in the microwave, stir in the honey and cinnamon until it drips slowly off the spoon.
- Build the stacks. Spread about 1 tsp of the peanut butter mixture over 4 apple rounds, sprinkle densely with granola and chia seeds, then top with a second apple round to form a sandwich.
- Finish and serve. Press gently so granola sticks, scatter a pinch of flaky salt and torn mint on top, and serve within 10 minutes for maximum crunch contrast.
Chef’s tip
Stir natural peanut butter from the bottom of the jar before measuring; the denser paste from below holds granola far better than the oily top layer.
