  • 1 tsp (5ml) fresh lemon juice
  • 1 tbsp (8g) chia seeds

Instructions

  1. Slice and treat the apple. Core the apple and slice into 8 rounds roughly 0.5cm thick, then brush both sides lightly with lemon juice to stop browning and brighten the flavor.
  2. Loosen the peanut butter. Warm the peanut butter in a small bowl for 15 seconds in the microwave, stir in the honey and cinnamon until it drips slowly off the spoon.
  3. Build the stacks. Spread about 1 tsp of the peanut butter mixture over 4 apple rounds, sprinkle densely with granola and chia seeds, then top with a second apple round to form a sandwich.
  4. Finish and serve. Press gently so granola sticks, scatter a pinch of flaky salt and torn mint on top, and serve within 10 minutes for maximum crunch contrast.
