Why this recipe works

A pinch of baking soda in the cooking water breaks down the skins so the chickpeas cook tender enough to crush between two fingers — the foundation of a smooth puree. Letting the garlic and lemon stand before blending mellows the raw bite, and the full four-minute process, emulsified with ice-cold water, is what whips air into the paste for that signature light texture.

Ingredients

Hummus base

  • 200 g dried chickpeas, soaked overnight with 1 tsp baking soda
  • 90 g raw stone-ground tahini, stirred until uniform
  • 45 ml fresh lemon juice, strained
  • 1 medium garlic clove, grated on a microplane

Seasoning & finish

  • 60 ml ice-cold water, as needed to emulsify
  • 6 g fine sea salt, divided
  • 30 ml extra-virgin olive oil, Kalamata or Picual
  • 1 g ground cumin, toasted

Optional garnish

  • 8 reserved whole chickpeas and a pinch of sweet paprika

Serves 2 · Prep 15 min · Cook 45 min · 312 kcal per serving

Instructions

  1. Cook the chickpeas. Drain soaked chickpeas, rinse, and place in a heavy pot with 1.5 liters fresh water and 1 tsp baking soda. Bring to a rolling boil, skim the foam for 3 minutes, then reduce to a steady simmer. Cook uncovered for 40 to 50 minutes until the skins slip off and a chickpea crushes effortlessly between two fingers. Drain and reserve 8 whole beans for garnish.
  2. Build the tahini base. In the bowl of a food processor, combine grated garlic, lemon juice, and 3 g salt. Let stand 10 minutes so the garlic mellows and the acid takes the edge off. Add tahini and process 60 seconds until it seizes into a thick paste, then stream in ice water 1 tablespoon at a time until the mixture turns pale, glossy, and ribbon-like.
  3. Puree to silk. Add the warm chickpeas and remaining 3 g salt. Process a full 4 minutes, stopping twice to scrape the bowl. The extended blend is non-negotiable for the signature airy texture. Check seasoning and adjust with lemon or salt. The hummus should hold a soft peak and slowly relax when spooned.
  4. Plate and finish. Spread the hummus on a shallow plate with the back of a spoon, spiraling from center out to create a well. Pool the olive oil in the well, dust cumin across the surface, and scatter the reserved chickpeas and paprika. Serve within 30 minutes at cool room temperature for maximum aroma.
