Parfait base
- 400 g coconut yogurt (live culture)
- 200 g mixed fresh berries
- 80 g homemade granola
- 2 tbsp chia seeds
Finishing
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 1 tbsp toasted coconut flakes
- 1 tsp lemon zest
Optional garnish
- Fresh mint sprig

Instructions
- Prepare yogurt base. Whisk the coconut yogurt with vanilla extract and lemon zest until smooth and glossy. Taste and adjust sweetness with a teaspoon of maple syrup if the cultures are very tart.
- Layer the parfait. Spoon a third of the yogurt into two tall glasses. Scatter a layer of berries, a sprinkle of chia seeds, and a spoonful of granola on top of the yogurt base.
- Build remaining layers. Repeat the yogurt, berry, chia, and granola layering twice more, finishing with a generous cap of granola so the top stays crunchy until served.
- Drizzle and serve. Drizzle the remaining maple syrup across the surface and scatter toasted coconut flakes. Serve immediately while the granola still has bite.
