Taco beef
- 600 g ground beef (85% lean)
- 1 yellow onion, finely diced
- 3 garlic cloves, minced
- 12 small corn or flour tortillas
Taco seasoning & toppings
- 2 tbsp chili powder, 1 tsp each cumin, paprika, oregano
- 1 cup shredded sharp cheddar
- 2 Roma tomatoes, diced; 1 cup shredded lettuce
- 1 avocado, sliced; ½ cup sour cream; lime wedges

- Pickled jalapenos and fresh cilantro leaves

Instructions
- Brown the beef. Heat a large skillet over medium-high and add the ground beef. Break it up with a wooden spoon and brown 5-6 minutes until deeply caramelized. Drain off excess fat, leaving about 1 tablespoon in the pan for flavor.
- Build the seasoning. Add the diced onion to the beef and cook 3 minutes until softened. Stir in garlic, chili powder, cumin, paprika, oregano, 1 teaspoon salt and ½ cup water. Simmer 4-5 minutes until the liquid reduces to a glossy sauce that clings to the meat.
- Warm the tortillas. Char the tortillas directly over a gas flame for 10 seconds per side, or heat in a dry skillet over medium heat 30 seconds per side. Stack and wrap in a clean kitchen towel to keep them warm and pliable at the table.
- Set the taco bar. Arrange the tomatoes, lettuce, cheddar, avocado, sour cream and lime wedges in small bowls. Transfer the hot beef to a serving dish with a slotted spoon. Let each person build tacos to taste, finishing with a squeeze of lime.
