Why this recipe works

Omelette base
- large eggs (8)
- baby spinach (150 g)
- feta cheese, crumbled (120 g)
- whole milk (4 tbsp)
Finishing
- butter (2 tbsp)
- fresh dill, chopped (2 tbsp)
- lemon zest (1 tsp)
- black pepper (½ tsp)
Optional garnish
- red pepper flakes (½ tsp)

Instructions
- Whisk eggs. Crack eggs into a bowl, add milk and black pepper, and whisk vigorously until fully blended and slightly frothy for maximum fluffiness.
- Wilt spinach. Melt half the butter in a non-stick skillet over medium heat. Add baby spinach and stir 60 seconds until just wilted. Tip onto a plate.
- Cook omelette. Melt remaining butter in the same pan. Pour in eggs, swirling to coat. Let set 90 seconds, then gently lift edges to let raw egg flow under.
- Fill and fold. When almost set, scatter spinach, feta, dill and lemon zest over one half. Fold over, slide onto a board, slice into four wedges and serve.

Pull the pan off the heat while the top still looks slightly glossy — residual warmth finishes the eggs without turning them rubbery.
