Why this recipe works

Whisking the eggs with a splash of milk until slightly frothy builds air into the omelette, while wilting the spinach separately keeps it from watering down the eggs. Pulling the pan off the heat while the top still looks glossy lets residual warmth finish the cook, so the eggs stay tender rather than rubbery.

Ingredients

Omelette base

  • large eggs (8)
  • baby spinach (150 g)
  • feta cheese, crumbled (120 g)
  • whole milk (4 tbsp)

Finishing

  • butter (2 tbsp)
  • fresh dill, chopped (2 tbsp)
  • lemon zest (1 tsp)
  • black pepper (½ tsp)

Optional garnish

  • red pepper flakes (½ tsp)

Serves 4 · Prep 4 min · Cook 6 min · 325 kcal per serving

Instructions

  1. Whisk eggs. Crack eggs into a bowl, add milk and black pepper, and whisk vigorously until fully blended and slightly frothy for maximum fluffiness.
  2. Wilt spinach. Melt half the butter in a non-stick skillet over medium heat. Add baby spinach and stir 60 seconds until just wilted. Tip onto a plate.
  3. Cook omelette. Melt remaining butter in the same pan. Pour in eggs, swirling to coat. Let set 90 seconds, then gently lift edges to let raw egg flow under.
  4. Fill and fold. When almost set, scatter spinach, feta, dill and lemon zest over one half. Fold over, slide onto a board, slice into four wedges and serve.

Time-saver tip

Pull the pan off the heat while the top still looks slightly glossy — residual warmth finishes the eggs without turning them rubbery.
