Ingredients

Sardines & marinade

  • 12 fresh whole sardines, cleaned
  • 4 tbsp extra virgin olive oil
  • 3 garlic cloves, thinly sliced
  • 2 tbsp fresh oregano, chopped

Finishing

  • 2 lemons, zested and juiced
  • 3 tbsp flat-leaf parsley, chopped
  • 1 tsp flaky sea salt
  • 1 tsp cracked black pepper

Optional garnish

  • 4 lemon wedges

Serves 4 · Prep 15 min · Cook 10 min · 340 kcal per serving

Instructions

  1. Marinate. Whisk olive oil, garlic, oregano, lemon zest, and half the juice. Coat sardines thoroughly and rest 10 minutes at room temperature.
  2. Heat the grill. Preheat grill or heavy cast-iron pan to high heat until smoking, then brush grates lightly with oil to prevent sticking.
  3. Grill quickly. Lay sardines flat and grill 3 minutes per side until skin crisps golden and flesh flakes easily from the backbone.
  4. Finish brightly. Transfer to a warm platter, shower with parsley, remaining lemon juice, flaky salt, and pepper. Serve immediately with lemon wedges.

Pat sardines completely dry before oiling so the skin blisters rather than steams, giving that signature Aegean char.
