Ingredients
Sardines & marinade
- 12 fresh whole sardines, cleaned
- 4 tbsp extra virgin olive oil
- 3 garlic cloves, thinly sliced
- 2 tbsp fresh oregano, chopped
Finishing
- 2 lemons, zested and juiced
- 3 tbsp flat-leaf parsley, chopped
- 1 tsp flaky sea salt
- 1 tsp cracked black pepper

- 4 lemon wedges
Serves 4 · Prep 15 min · Cook 10 min · 340 kcal per serving
Instructions
- Marinate. Whisk olive oil, garlic, oregano, lemon zest, and half the juice. Coat sardines thoroughly and rest 10 minutes at room temperature.
- Heat the grill. Preheat grill or heavy cast-iron pan to high heat until smoking, then brush grates lightly with oil to prevent sticking.
- Grill quickly. Lay sardines flat and grill 3 minutes per side until skin crisps golden and flesh flakes easily from the backbone.
- Finish brightly. Transfer to a warm platter, shower with parsley, remaining lemon juice, flaky salt, and pepper. Serve immediately with lemon wedges.
