Why this recipe works
Streaming sweetened condensed milk into pale-whisked yolks before adding the acid means the Key lime juice sets the curd naturally — whisk just until it thickens and turns glossy, about a minute, because overmixing loosens it again. Pulling the pies while the centers still jiggle, then chilling overnight, is what gives them that clean, sliceable set.
Ingredients
Graham crust
- 1½ cups graham cracker crumbs
- 6 tbsp unsalted butter, melted
- 3 tbsp granulated sugar
- ¼ tsp fine sea salt
Key Lime Filling & Topping
- 1 can (14 oz) sweetened condensed milk
- ½ cup fresh Key lime juice
- 3 large egg yolks
- 1 cup heavy cream, whipped with 2 tbsp sugar

- Thin Key lime wheels and lime zest curls
Serves 6 · Prep 20 min · Cook 15 min · 285 kcal per serving
Instructions
- Build the graham crusts. Preheat oven to 350°F. Stir graham crumbs, melted butter, sugar, and salt until sandy. Press 3 tablespoons firmly into the base and sides of 6 buttered muffin cups or mini tart tins. Bake 7 minutes until set and fragrant.
- Whisk the Key lime curd. In a bowl, whisk egg yolks until pale, then stream in sweetened condensed milk. Add Key lime juice and whisk just until the filling thickens slightly and looks glossy, about 1 minute. Do not overmix or it will loosen.
- Bake and chill. Divide the filling evenly among the warm crusts. Return to the oven for 8 minutes until the edges are set but the centers still jiggle slightly. Cool to room temperature, then refrigerate at least 3 hours, preferably overnight.
- Top and serve. Whip heavy cream with sugar to soft peaks and pipe a generous rosette onto each chilled pie. Finish with a thin Key lime wheel and a shower of lime zest. Serve immediately for the brightest citrus aroma.
Fancy tip
Always use fresh Key lime juice; bottled juice tastes flat. If Key limes are scarce, substitute 2 parts Persian lime to 1 part lemon juice for balance.
