Why this recipe works
The twist is what does the work: folding the Nutella inside, then giving each strip three full turns, exposes layer after buttery layer to the heat so they puff and separate into crisp ribbons instead of steaming into a soggy log. An egg wash locks in the shine while the turbinado sugar and flaky salt caramelise on top.

- 1 sheet puff pastry (about 9 oz), thawed
- 1/3 cup Nutella, slightly warmed
- 1 large egg, beaten with 1 tsp water
- 2 tbsp all-purpose flour (for dusting)

- 1 tbsp turbinado sugar
- ¼ tsp flaky sea salt
- ½ tsp ground cinnamon
- 1 tbsp finely chopped toasted hazelnuts

- Dusting of powdered sugar just before serving
Makes 10 twists · Prep 10 min · Cook 18 min · 218 kcal per serving
Instructions
- Prep the pastry. Preheat oven to 400°F and line a baking sheet with parchment. Roll the pastry on a lightly floured surface into a 10x12 inch rectangle, keeping the corners square.
- Fill and fold. Spread the warmed Nutella evenly over half the pastry lengthwise, sprinkle with hazelnuts if using, then fold the bare half over to create a filled rectangle. Press the edges gently to seal.
- Cut and twist. Slice the folded pastry crosswise into 10 equal strips. Hold each strip by the ends and twist in opposite directions three times, then place on the sheet with 1 inch of space between.
- Glaze and bake. Brush each twist with egg wash, scatter turbinado sugar and flaky salt over the tops, and bake 16-18 minutes until deeply golden and the layers have puffed and separated.
Fancy tip
Warm the Nutella to a loose spreading consistency but not hot, or it will soak into the pastry and prevent it from rising into crisp layers.
