Almond flour keeps the crumb moist and rich while the eggs do the lifting, so a single teaspoon of baking soda is all you need. The real trick is in the fold: stir the batter only until just combined, then tuck the blueberries in gently so they stay whole and suspended rather than bleeding or sinking.
Ingredients
Muffin batter
- 2 cups almond flour
- 3 large eggs
- ⅓ cup maple syrup
- ¼ cup coconut oil, melted
Flavor & fold-ins
- 1 tsp vanilla extract
- ½ tsp baking soda
- 1 tsp fresh lemon zest
- 1 cup fresh blueberries
Optional garnish
- extra blueberries on top
Serves 2 · Prep 10 min · Cook 22 min · 245 kcal per serving
Instructions
- Preheat & prep. Heat oven to 175°C (350°F) and line a muffin tin with 8 paper liners or grease well with coconut oil.
- Mix wet. Whisk eggs, maple syrup, melted coconut oil, vanilla and lemon zest in a bowl until smooth and uniform.
- Combine & fold. Stir in almond flour and baking soda until just combined, then gently fold in blueberries without crushing them.
- Bake & cool. Divide batter into liners, top with extra berries, bake 20–22 min until golden and a toothpick comes out clean. Cool 10 min.
Chef’s tip
Toss the blueberries in 1 tsp almond flour before folding them in — this keeps them suspended instead of sinking to the bottom of each muffin.
