Why this recipe works

The trick is in the crust: fork-ridging the mash before it bakes gives the raised peaks direct heat, so they crisp and burnish into golden ridges that contrast the creamy potato and savoury lamb beneath. Simmering the filling with tomato paste and Worcestershire builds a deep, thickened base that won’t turn watery under the topping.

Ingredients

Lamb & mash

  • 300 g ground lamb
  • 500 g Yukon Gold potatoes
  • 2 tbsp Worcestershire sauce
  • 60 ml whole milk

Savoury filling

  • 1 diced carrot
  • 1 diced onion
  • 80 g frozen peas
  • 1 tbsp tomato paste

Optional garnish

  • Chopped fresh thyme leaves

Serves 2 · Prep 25 min · Cook 35 min · 585 kcal per serving

Instructions

  1. Mash the crust. Boil peeled potato chunks 18 min until tender. Drain, mash with warm milk, 20 g butter and salt until silky. Cover to keep warm.
  2. Brown the lamb. Render ground lamb in a skillet over medium-high heat 6 min. Add onion and carrot; cook 5 min until softened. Drain excess fat.
  3. Build the filling. Stir in tomato paste, Worcestershire and 120 ml stock. Simmer 8 min until thickened. Fold in peas. Transfer to a small baking dish.
  4. Crust and bake. Spread mash over filling, fork-ridge the surface. Bake at 205°C for 22 min until peaks are golden brown. Rest 5 min before serving.

Ridge the mash with fork tines before baking; the raised peaks catch direct heat and turn into crisp, burnished ridges that contrast the creamy base below.
