Ingredients
Bowl base
- wild salmon fillets, skin on (2 x 150 g)
- cooked quinoa (200 g)
- ripe avocado, sliced (1)
- baby spinach (80 g)
Glow dressing & finishing
- extra virgin olive oil (3 tbsp)
- fresh lemon juice and zest (1 lemon)
- raw honey (1 tsp)
- grated fresh ginger (1 tsp)
Optional garnish
- black sesame seeds (2 tsp)
Serves 2 · Prep 15 min · Cook 12 min · 560 kcal per serving
Instructions
- Season the salmon. Pat salmon dry and season both sides with sea salt, pepper and lemon zest. Resting at room temperature for 10 minutes helps the skin crisp evenly during searing.
- Sear skin-crisp. Heat 1 tbsp olive oil in a non-stick pan over medium-high. Place salmon skin-down, press gently and cook 5 minutes, flip and cook 2 minutes until just opaque.
- Whisk the dressing. In a small bowl whisk remaining olive oil, lemon juice, honey and ginger until emulsified. This vitamin C and healthy fat combo boosts collagen synthesis.
- Build the bowl. Divide quinoa and spinach between two bowls, fan avocado over the top and add salmon. Drizzle generously with dressing and finish with black sesame seeds.
